A recipe of the Djerbian Couscous, from the island of dreams Djerba!

I'm originally from Djerba, the dream island in Tunisia, this is a good recipe from my family, we all adore and as we say: we sell our clothes to eat it", You Can say that any djerbian family eat this recipe once a week. And we eat it even with Buttermilk or soda.
But frankly, it contains and know how many but a huge number of calories because it is too oily.

Ingredients:
1/ Cured meat or a fresh one.
2/ 6 big Onion
3/ some salt and spices
4/ 3/2 table spoon of tomates
5/ 1/2 harissa
6/ 1 carrote
7/ 1 potato
8/ 1 Aubergine
9/ Parsley
10/ Chard
12/ green Pepper
13/ 2 table spoon for every person olive oil

Cut the meat into small pieces.
Put your meat in the oil, on the oven until it the oil become a little bit brown than add the chopped onions, salt and spices. Keep mixing for few minutes until the onions become red
Then add some water, the tomato, harissa.
Few minutes and add the chopped carrote, add the chopped potato and the aubergine then of corse the Parsley and the chard 10 minutes and add finally the chopped green pepper.

Recipe of the delicious Brownies:
I will please you a wonderful recipe that I love, and the moste important my husband adore it. Do not forget ladies that the way to your man's heart is his stomach and I assure you that even if he does not say and even he does not like very much eating but seeing you doing an effort in the kitchen will please him.
So this recipe that i tried so many times but I'm so sorry I haven't any photo for the moment, but I'm planning do a brownies cake in the few next days so I will upload some photos.
Ingredients:
1/ 250 g of Dark chocolate
2/ 150 g butter
3/ 3 eggs
4/ 150 g sugar (if you like it sweeter you put 200g)
5/ 150 g flour
6/ 1/2 baking powder

1- Preheat the oven at 180° C.
2- At first keep the butter at room temperature
3- Mix the eggs for few minutes, then add the sugar and keep mixing until you have a good texture
4- Add the flour and the baking pouder and of course keep mixing.
5- Melt the butter and add the chocolate.
6- Mix all the ingredients with the melted chocolate with a spoon.

Put in the Oven for 20 minutes.

A recipe of the Fricassee, A Tunisian Snack

Ingredients          500g flour       1 yeast sachet     1 tsp salt     1/2 tsp sugar     1/4 cup oil     1/4 glass of milk     1 egg     Lukewarm water     Oil for fryingFor the filling:     Potatoes     Thon crumbled     Hard boiled eggs




                                                 

Preparation

I// Put the yeast, or it is called also the baking powder in few centiliters of warm milk with sugar, mix and leave a few minutes.

The sugar play the rule of a catalyst. so do not put a big quantity just a half of a spoon table will be enough or it will be so sweet.

Place all ingredients in a bowl, add the dissolved yeast, kneading and add warm water gradually until a ball that does not stick to the hand. Let stand 1 hour and again well knead about 15 minutes, until the dough working stewed both are successful.

II// Form small balls to the desired size, let stand 15 minutes on an oiled dish, then fried.

III// Open stewed or the cooked pieces with a knife and garnish on  your choice: harissa diluted in a little water and oil, tuna, boiled potatoes, boiled eggs, olives ...

And it’s served hot, if it gets cold it becomes like plastic! Especially if it is not done well.

A recipe of a Tunisian salad, S7ann Tounssi
Tunisian cuisine is a mixture of Mediterranean food and different culinary traditions. It is distinctive spicy and it  comes from the many civilizations which have ruled the land now known as Tunisia like the native Punics-Berber people, Romans, Vandals, Byzantines, Arabs, Spanish, Turkish, Italians, and French. 
All the Tunisian does this plate especially with pasta, couscous or even a simple grid meat or fish. Actually sometimes, I consider it like a dinner if I want to eat very light at night, especially for those who are doing a diet if we exclude the olive oil it is a perfect plate.

Ingredients for 4/6 people:
4 tomatoes///3 green or yellow peppers///2 medium onions///340 g of tuna crumbled natural, drained/// 2 boiled eggs///6 tablespoons olive oil1 lemon
some olives///4 tomatoes are firm///1 cucumber
A few leaves of fresh mint, chopped (optional)
seasoning:3 
tablespoons olive oil///2 tablespoons vinegar///Salt and pepperLemon juice.
Preparation:
Wash the cucumber, tomatoes, peppers, seeded and diced.
Chopped onions.
Mix the vinegar, salt, pepper and oil in a bowl. Book.
Cut and seeded tomatoes into small cubes.
Arrange on a platter.
Add the lemon juice. Mix everything.
Add tuna crumbs and eggs and sliced olives.
Season the salad with the vinaigrette.
Crumble the leaves of mint. Serve chilled.

La Crêpe

Ingredients for a dozen pancakes:
- 200 g flour
- 60 g of sugar
- 2 eggs
- 350 liters of milk
Steps to follow:
Pour the flour and sugar in a bowl.
Make a well in the middle and break are the two eggs.
Mix with a wooden spoon slowly incorporating the flour with the eggs.
Once the dough begins to thicken well, add the milk several times.
Mix to obtain a homogenous unit, and place one hour in the fridge.
Oil your griddle and have it heat up.
When she is hot (a small smoke clears in) pour a ladle of pancake batter.
Turn right pan to distribute the batter and pour it all over, if necessary, the surplus in the bowl.
As soon as the edges begin to brown, flip the pancake with a spatula.
Still using a spatula Put the filling, fold the crepe in 4 and serve immediately with your little greedy impatient!
NB: The pancake can be consumed alone, but it can also be topped with a garnish such as sugar, jam, nutella of, whipped cream, cheese, ham or cooked and seasoned vegetables. The pancake is usually for sweet wheat pancakes and rather salty for buckwheat pancakes.
In Tunisia, in most restaurants, we thus find the pancake with harissa, tuna, cheese, and an egg, and for people who love the spicy food, it's very delicious!
